Creamy, tangy, and perfectly portioned, our naturally-dyed deviled eggs are a colorful take on the fan-favorite finger food.
For Red/Purple Dye
• 1 beet (finely chopped), 1 ½ cups water, ½ cup vinegar, 1 tbsp sugar, 1 bay leaf, 1 garlic clove (crushed), peppercorns, 1 tsp salt. Bring all ingredients to a boil, reduce heat, and simmer for 15 minutes. Remove from heat and strain into a jar.
For Yellow Dye
• 1 tbsp turmeric, 1 ½ cups water, ½ cup vinegar, 1 tbsp sugar, 1 bay leaf, 1 garlic clove (crushed), peppercorns, 1 tsp salt. Bring all ingredients to a boil, reduce heat and simmer for 10 minutes. Remove from heat and strain into a jar.
For Blue Dye
• 1 ½ cups red cabbage (finely chopped), 2 cups water, 1/2 cup vinegar 1 tbsp sugar, 1 bay leaf, 1 garlic clove (crushed), peppercorns, 1 tsp salt. Bring to a boil and add all ingredients, reduce to a simmer and allow to cook 15-20 minutes. Strain 2 cups of liquid into a jar. SLOWLY add baking soda, ¼ tsp at a time, until you achieve the desired blue. Don’t add too much or mixture will go green. Mixture will also react with vinegar, so best to do this in a sink as it can get messy.
Peel eggs, and once mixtures have cooled, drop 3-4 eggs in each jar. Seal and refrigerate for 24 hours.
Remove eggs from jars and carefully cut them in half lengthwise. Scoop out the yolks and add to a bowl with the mustard, relish, salt, pepper, mayo, and sriracha. Mix well and pipe into halved whites.
