Juicy, sweet tomatoes. Creamy avocado. Crisp onions. We took a classic tomato salad and put our own BigOven twist by adding an easy avocado dressing, plus fresh basil and sweet corn. This is the ideal summer salad.
1. Prepare the dressing. In a blender or food processor, combine avocado with water, olive oil, lemon juice, garlic, basil, and salt. Process until smooth.
2. Arrange cut tomatoes on a serving platter. Top with red onion, corn kernels, and torn basil. Sprinkle with ΒΌ teaspoon salt.
3. Use a spoon to drizzle half of the dressing across the salad. Serve with remaining dressing on the side.
