Dark, rich, chocolate in a light and fluffy cheesecake? Yes, please. Trust us when we say this is one of the most delicious and unique cheesecakes you'll ever make. You MIGHT be a little hesitant because of how it looks, but just like books, you can't judge this cheesecake by it's cover.
1. Preheat an oven to 425 degrees F. Lightly grease an 8” springform pan and double line with two pieces of parchment paper.
2. Place chocolate in a microwave-safe bowl, and heat until chocolate just begins to melt, about 20-30 seconds.
3. In a small saucepan, heat the heavy cream until warm but not simmering. Add coffee granules to cream, and mix well, then pour over melted chocolate and gently stir until fully combined and smooth. Set aside to cool.
4. In the bowl of a standing mixer, beat the cream cheese using the whisk attachment on medium speed for2-3 minutes, or until smooth. Add sugar and salt, and continue to whip for 1-2 minutes, or until smooth and fluffy. Add in eggs one at a time, pausing 10-15 seconds between each addition to fully incorporate into the batter. Add vanilla, then sift in remaining dry ingredients, beating on medium speed for an additional 1-2 minutes or until fully combined and fluffy. Add the chocolate mixture and mix just until combined.
5. Pour mixture into the spring form pan and place on a baking sheet for easy handling. Bake for 40-50 minutes, until the top is browned and slightly burnt and the center is jiggly and a bit loose.
6. Remove from the oven and allow to come to room temperature before removing spring form and parchment. You can serve immediately, or allow to chill in the refrigerator for 2-3 hours (or overnight) before enjoying
