You can't go wrong with a one-pan dinner, and few things are as easy (and delicious) as roasted chicken and vegetables. These chicken thighs get seriously crispy, and pair them with tender veggies and a savory lemon-dill sauce, and you have a dinner fit for any night of the week without a bunch of fuss!

1. Preheat the oven to 425° F.
2. In a small bowl or measuring cup, mix together the olive oil, lemon zest, lemon juice, salt, black pepper, garlic powder, and fresh herbs.
3. Arrange radishes, broccolini, and new potatoes in a single layer on a large-rimmed sheet pan. Drizzle half of the olive oil mixture over the vegetables and toss to coat evenly.
4. Pat the chicken dry with paper towels. Arrange the chicken thighs between the vegetables. Brush the remaining olive oil mixture over the chicken thighs.
5. Bake for 30 to 40 minutes until a thermometer inserted in the thickest part of the chicken thighs reads 165° F.
6. While the chicken and vegetables are in the oven, prepare the serving sauce. Stir or blend together the yogurt, lemon juice, lemon zest, dijon mustard, garlic, dill, parsley, and mint. Taste and season with salt and black pepper. Serve the yogurt herb sauce with the chicken and vegetables.
