Smoked salmon can be used dozens of different ways, and we are in love with this light, savory mousse. It's packed full of flavor and works well piped into mini tart shells or just spread on crackers or toast! These bite-sized delights make a tasty addition to any party tray or celebration.
1. Prepare a piping bag with tip of choice and set aside. (We like to use the French Star piping tip for a more sophisticated presentation.)
2. Add shallots, poblano pepper, 1 tbsp lemon juice, lemon zest, asiago cheese, dried dill, pepper, and cayenne to the bowl of a food processor (or high-powered blender) and pulse until combined and vegetables are finely diced.
3. Add cream cheese and mix on high speed for 15 seconds. Stop to scrape and mix on high speed for additional 10-15 seconds or until fully combined. Add more lemon juice if the mixture is too thick – take care not to over add and lose the firm mousse consistency.
4. Add mousse to a bowl, add in the salmon, and fold to combine. Taste and add salt or additional pepper, if desired.
5. Transfer mousse to a piping bag and refrigerate for 30 minutes or overnight.
6. Pipe into small tart shells or onto crackers or bread. Top with fresh dill and enjoy!
