Soft, creamy potatoes loaded with herbs, spices, and cream? This pleasing side dish is a twist on the classic gratin and uses three different types of potatoes for layers and layers of flavor.
1. Preheat oven to 400 degrees F and grease a 12-inch round skillet (you can also use a 9x13 baking dish).
2. Arrange leek and garlic on a sheet pan. Drizzle with olive oil and bake for 20 minutes.
3. Remove the pan and set aside to cool.
4. Slice the potatoes thinly (about 1/16” thick). We highly recommend using a mandolin, but you can also slice by hand if needed.
5. Add leeks and garlic to a high-powered blender. Top with thyme, chives, pepper, salt, cayenne, and heavy whipping cream. Blend on high for 30 seconds, or until the mixture is smooth and uniform.
6. To create the spiral bake for an elevated presentation, stack the potatoes in order (sweet potato, yukon gold, russet) and arrange them in the pan until it is full. You might find it easiest to stack 30 potatoes at a time before placing them in the pan. Alternately, for a quicker task, you can simply place potatoes in a single layer horizontally in the pan, as in a traditional gratin bake.
7. Pour cream mixture over potatoes. Cover tightly with aluminum foil and bake for 1 hour.
8. Remove the foil and sprinkle with cheese. Continue baking for 25-30 minutes, or until potatoes are soft and cheese has browned in spots.
9. Let stand for 10 minutes. Serve and enjoy!
