1. Preheat the oven to 375° Fahrenheit. Line a baking sheet with parchment paper and set aside.
2. Use a knife or mandoline to slice zucchini into ¼-inch thick rounds. Arrange zucchini slices on several layers of paper towels. Sprinkle zucchini with salt and allow the zucchini to drain for about 20 minutes.
3. Place pie dough on the parchment-lined baking sheet. If using homemade dough, sprinkle it with a bit of all-purpose flour, press into a disc, and roll it out into a rough circle that’s about as wide as the baking sheet.
4. Sprinkle the parmesan cheese on top of the dough, leaving a 2-inch border.
5. Pat the zucchini slices dry with another paper towel. Arrange the zucchini slices in a circular pattern, slightly overlapping shingle-style, on top of the parmesan, again leaving a 2-inch border.
6. Sprinkle the shallot, garlic, Italian seasoning, olive oil, and cracked black pepper on top of the zucchini.
7. Fold the edges of the dough over the zucchini, overlapping the crust and pinching them together as needed. It should look rustic. Brush the edges of the crust with the beaten egg.
8. Bake until the crust is golden brown, about 40 to 45 minutes. Slice the galette into 6 wedges and serve.
